Mexican Cuisine
If you enjoy Taco Tuesday, then you have officially fallen in love with the Mexican Food. The main grain of Mexican cuisine is maize. Also known as corn, maize is grown for the past 9000 years after the crop was discovered by the people in Mayan civilization. Mexican empire flourished when they started growing beans, tomatoes, chili pepper, sweet potato and cactus. Till this date these ingredients are used in cooking authentic Mexican dishes and drinks.
Great use of spices, fresh chili pepper dishes like fajitas, tortilla chips, corn chips, salsa, chimichangas, burritos, nachos and quesadillas are invented in America. But when you are looking for authentic Mexican food then you must find a restaurant in the city that serves Rajas con Queso, Garbanzo in a Guajillo Chile Sauce, Pork Filled Chiles Rellenos, Chiles en Nogada, Molcajete Salsa, Pico de Gallo and Frijoles de la Olla. An eye-opening fact – Mexican don't like their food hot. They use fresh chili and other spices to create a flavor that lingers in your mouth.
Mexican food is great for those who are Gluten Intolerant as they use Corn instead of wheat in most of their dishes. Also, you can easily find many beans based Mexican dishes. Another dish which didn't get similar glory as tacos or nachos is the Mexican hot chocolate. If you love something hot on a chilly day, then go for Mexican Hot Chocolate. On merry days, you can enjoy the authentic Mexican Drinks like Tequila, Mezcal, Tecuí, Sotol, Bacanora, Charanda, Posh O Pox, Puebla and Pulque. Mexican Cuisine is for people who enjoy strong drinks and hearty meals.

Very nice. We stopped in on our drive from Portland to Chicago. We wanted a break from chain restaurants and lucked into this spot. I had tamale an enchilada combo plate; my wife had a veggie burrito. I think you can gauge s Mexican cantina by its tamale, cheese enchilada, and refrained beans The food was great. I especially enjoyed the beans and the cheese enchilada Small place in a small town

So my daughter says, "A restaurant, a store, an old tv? What kind of place is this? This place is so weird, I just want to go home!" She's six. My husband and I both agreed this place needs a lot of TLC. It seemed clean, but really run down. The booths were torn up, and the surroundings were dingy and old. The food didn't fare much better. My husband's tamale was dry and didn't have very much pork in it at all. Chips and salsa were ok. My chili verde was just ok. Mediocre at best. Not an offensive place to dine, but very forgettable.

From the moment you walk in, you are met with a horrible stench of manure. The entire restaurant smells like the carpet is soaked in manure. The service is awful. The margaritas are nothing but margarita mix meaning no tequila. The food was mediocre but eating while smelling manure makes for a horrible experience. And on too of it all, it was way overpriced. We will be sure to never eat there again.

Whenever I drive through Rock Springs I stop at Casa Chavez. My go to dish is the chile verde burrito. You can tell that it is made with fresh ingredients and with pride. Authentic Mexican food and it tastes like it. Worth driving to downtown for this food, the service is always good. Parking is right out front or in the back. I usually order something different to go as well, this time I tried two chile rellenos. I should've ordered three! Delicious.

What a disappointment! The place is old & a bit run down but it is adjacent to a Mexican grocery so I was hoping things would be authentic & homemade. I was sorely disappointed. I'm very sensitive to MSG. I immediately got a headache afterward so I know they used canned enchilada sauce -- virtually all of the canned enchilada sauces are full of MSG. The rice was bland. The beans were fair. The tamale had a good flavor but I had to hunt to find any shredded beef. Everything was overpriced for the poor quality. At Taco Bell prices I'd say it was a deal but at $9.50 - $15.99 for entrees this place is a rip-off. My wife's Margarita was a cheap mix with little alcohol & served in a plastic Pepsi glass. Even the service was only fair at best. There's just nothing about this place that was good. Don't waste your money here.

Average: not bad, not great. Better than fast food. More expensive than fast food too. Service was ok. Probably won't stop here again.

Fantastic authentic Mexican food and a very friendly staff. We had the mochajiete special and two big guys sharing were very satisfied. Owner said he is adding seafood to the menu and I will definitely be back next time through Rock Springs.

Stopped in on the long car ride home to Indiana from Utah because we like to avoid chains if at all possible. It is kind of located in a ghost town area of Rock Springs (an oasis in the endless sea of Wyoming). We had two servers, one was a man who was friendly enough but slow and the second was a girl who was fairly timid and quiet and awkward. The service was slow for a Mexican restaurant like this and there was only one other table with people seated at it in the place. I got a carnitas taco and a beef taco (different than normal ground beef taco although that's what it was according to the menu). The beef taco was pretty good and the meat had good flavor. Carnitas were just kind of okay. I've had much better. Also, the tacos were hard shell and that probably affected my opinion because I prefer flour and was not expecting it. That is probably my fault for not specifying, however, so I'm not blaming that on the place. Rice and beans were average. This place perfectly fits the "okay" category of Yelp because I expected it would be good based on the reviews but it was just okay. The building was slightly run down and not the most clean Mexican restaurant I have been to, but it was not the worst either.

Was on my way to LA when I made the good decision to stop here. One of the best taco salads I've ever had. Delicious ground beef that you can tell has been custom seasoned with care (no store bought seasoning packets like in most Mexican restaurants). Chips were a bit stale and cold, and the service was very slow. Slow enough to warrant 3 stars but because that taco salad was so good, I'm keeping this at 4 stars.

Everything was ok except the fajitas - they came out dry and the waitress had the nerve to ask if we knew what they are supposed to look like! Haha anyway, margaritas were also awesome and they serve the alcohol separate so you know exactly how much each drink contains.

The food is excellent! The service is wonderful. The building isn't the cleanest, but if you're driving through Wyoming, and craving Mexican food, skip the stuff by the highway and find your way here! Spanish speaking is a plus!

Found this place while traveling through Rock Springs. Very authentic Mexican, and I'm from California so I know! :-) Yummy chips and salsa. I got the Fajita Burrito and ate every bit of it.
